Fall is my favorite season, hands down. The cooler air, the boys working in the fields, and all things apple and pumpkin are the highlights, but boots, scarves, and plaid are right up there as well. We normally take a trip to the apple orchard, but now that my kiddos are both in school, we will have to see how things pan out. (See also: our last few trips with my kids + my nephew have left my mom, sister, and I completely wiped.) My kids love spending time with their dad out in the field, and I love that we can live the farm life right from our back yard.
Even if we don’t end up at the orchard this year (I might find a way because DONUTS!) I have already whipped up the perfect fall dessert: Apple Crumble. It’s a little slice of heaven and the perfect use for those apples from the orchard.
3-4 large apples (I used Gala but any baking apple will do!)
½ cup sugar
1-2 tsp lemon juice
2 Tbsp flour
½ tsp ground cinnamon
1 cup walnuts or pecans, roughly chopped
1 cup all purpose flour
1 ¼ cup rolled oats
½ cup brown sugar
1 tsp cinnamon
pinch of salt
8 Tbsp (1 stick) cold butter cut into pieces
Preheat oven to 350 degrees.
Peel, core, and slice the apples. Place them in a large mixing bowl with the other filling ingredients: sugar, lemon juice, flour and cinnamon. Stir them altogether then place in a single layer in a greased 9×13 pan.
In another large bowl, combine the nuts, flour, oats, sugar, cinnamon, and salt for the topping. Cut the cold butter into the topping ingredients with a pastry cutter until pea size lumps form.
Top the apples with the topping mixture evenly and bake until it is bubbly and the top is golden brown, around 45 minutes. Serve warm with vanilla ice cream or whipped cream.
In addition to baking some fall goodies, I love to decorate for fall. It normally takes me some resistance to start AFTER September 1st! There’s nothing better than a few fall scented candles with windows open in our house. It’s my favorite season, especially now that we live in the country.
