Being in the kitchen is one of my favorite things, and I owe that to my mom and grandma who taught me how to cook. During the fall, I am in the kitchen more it seems like- baking treats for the farmers, and making sure that Brandon has a meal to heat up when he is done for the day. One of my go-to meals is a Chicken and Rice Casserole that my mom passed down to me. It is the perfect meal for a busy day, and has quickly become a staple in our home.
The prep is minimal, especially with Uncle Ben’s Ready Rice! You can even throw it together in the morning, put it in the fridge, and bake it later in the day. One pot meals are definitely a plus in this house.
Did you notice my helper? Kenley is always wanting to be in the kitchen with me. I remember being in the kitchen a lot with my mom, so I let Kenley help any chance I get. The best part about this recipe is that it’s easy enough for her to help me with. I will say that if it’s not cookies, she tends to bail pretty early on. I try to soak up even a few minutes of her helping me, knowing that I am helping to set a good foundation for her later on in life.
Ben’s Beginners began with a simple ambition – to get kids to cook! It’s fun to see Kenley proud of herself after helping me, and when she is doing independent play, she is always coming up with her own recipes and pretending to make them.
