It’s the time of year where I start to think about teacher gifts, because if I don’t start now, it may never happen! I am lucky to be good friends with the kids’ teachers since I used to work at the school. I know exactly how hard they work and how much they love what they do, and I wanted to do something special for them this holiday season. I decided to make them a sweet yet practical treat featuring my all time favorite holiday cookie (Chocolate Pixies!) and a DIY Peppermint Sugar Scrub.
I love any excuse I can use to pamper myself, so I wanted to make something for them that gives them an excuse to spend some time for themselves. I made a quick and easy sugar scrub– perfect for caring for skin in the wintertime!
What you need: coconut oil, granulated sugar, peppermint essential oil, and glass jars to store it in.
To start, spoon 3/4- one cup of coconut oil into a microwave safe bowl. (I ended up using almost the entire jar for the 4 small wide mouth mason jars.)
Microwave the coconut oil in 30 second increments until it is completely melted.
Then, add in the granulated sugar. I used 1 cup for every 3/4 cup of coconut oil. Stir until it is completely combined.
When the sugar is combined, add in your essential oil. I used 10 drops, but you can use more or less depending on your preference.
When the oil is stirred in, then it’s time to spoon it into jars for gifting or storage.
Screw on the lid, write on the top, and voila! The perfect gift for anyone this holiday season.
To take things up a notch, I made a batch of my husband’s favorite holiday cookie– Chocolate Pixie cookies– (recipe below!) and enclosed a few along with the peppermint scrub for a sweet gift that the kid’s can’t wait to take to their teachers.
For the cookies, first, blend together the oil and the cocoa powder together in a bowl.
Then, add the rest of the ingredients, stopping to scrape the bowl after the addition of the flour.
Then, once it’s all combined, lick the spatula. (This is what Kenley is telling me to write!)
Chill the dough for 1 hour in the fridge, then roll in between your hands into one inch balls, and then coat completely with powdered sugar. Line a cookie sheet with parchment paper, arrange the cookies, then bake at 350 degrees for 10 minutes.
Once they have cooled, they are ready to package and share– if you can stay away from them that long!
For gifting purposes, I put the jar of peppermint scrub in the middle of a Rubbermaid TakeAlong Deep Square container.
