I knew going into 2016 that I needed to dial in on my nutrition as well as get my workouts in daily, but I don’t want to feel like I am depriving myself. That has always been my biggest hang up! My sister, however, is really good at eating right and I have learned a LOT from her! She shared with me her healthy chicken salad recipe and I am hooked. It makes the perfect lunch, or even a quick snack without sacrificing flavor. Shredded chicken, greek yogurt, grapes, apples, red onion, topped with Craisins® Dried Cranberries and slivered almonds combine for a healthy meal that will keep you on track!
It’s pretty foolproof. Assemble your ingredients, add to a big bowl, and mix until combined.
When it is all combined, you can serve it in a variety of ways:
- with crackers
- on flatbread
- by itself
- on a bed of lettuce
My favorite way is with some crackers, and these flat bread crackers are perfect! I also add a few more Craisins® on top for an extra pop of flavor, and in each 1/4 cup they provide a 1/2 cup of fruit! I find myself adding them to a lot of my salads lately, which is why I buy the 48 ounce Craisins® Dried Cranberries Club Pack at Sam’s Club! Look for them over by the dried fruit and snacks aisle.
This is the perfect make-ahead lunch for a busy work week, a lunch with friends, or even just to have in your fridge so you aren’t tempted by other things.
