Our grill is the most used kitchen tool for summertime, hands down. After a couple years of practicing cooking on it, I can say that my husband has officially retired from grilling. He will be the first to admit it, too! Now that I am a little more confident in my grill skills, I decided to try something I hadn’t done before- Teriyaki Chicken Kabobs. They pair perfectly with Clos du Bois Chardonnay, making it the perfect light, easy summer meal.
What you will need:
- Boneless, skinless chicken breasts or tenders, cut into pieces
- Teriyaki Marinade
- bell peppers
- pineapple chunks
- kabob skewers
Start by cutting the chicken into pieces and placing into a gallon zipped bag. Then pour 1/3-1/2 of a bottle of teriyaki marinade on top of the chicken and refrigerate for 30 minutes.
While the chicken marinates, cut your peppers and pineapple into big pieces so you are ready to assemble the kabobs on skewers. You can do this to your preference! I did some with just chicken and pineapple for the kiddos, and added bell peppers to mine. Next time, I might try some with green peppers and zucchini.
Now they are ready for the grill! I preheated the grill, then turned the burners to low. I grilled them for 4-5 minutes on each side, or until the chicken was cooked all the way through.
